I’m not usually one for weeds in the garden, but turning these sunny blooms into a simple tea has been a surprisingly nice afternoon ritual. The dried roots themselves are clean and easy to work with, and I love that I can also toss a few fresh leaves into a salad if I’m feeling adventurous.

The whole plant being usable is what sold me—I've tossed a few roots into soup broth and steeped the rest for tea, both turned out surprisingly earthy and mellow. It's nice having one bag that covers cooking and steeping without feeling like I'm forcing it.

I've been adding these dried roots to my tea every morning and the earthy flavor pairs really well with a bit of honey. The whole plant being usable is what sold me, and I love that I can toss a few into salads too. Definitely restocking once this bag runs out.
